
Burrito with BBQ & Horopito Salmon
Looking for a light lunch or dinner? This wrap is packed full of goodness and delicious flavours, and of course our delicious hot smoked salmon. A quick and easy meal for those busy bees.
Ingredients
1 pack Aoraki BBQ & Horopito Dry Rub Hot Smoked Salmon
1 pack wraps
100g Cos lettuce
1 Apple
1 Baby radish
3-4 Tablespoons of your favourite hummus
1 Avocado
1 Tomato
1 Lime
2 Tablespoons olive oil
Salt & Pepper
Method
Step 1
Prep your fillings. Start by slicing your cos lettuce and grating your apple and baby radish. Season to your liking. Toss these ingredients together and set aside
Step 2
Spread hummus onto a wrap.
Step 3
Cut your salmon into strips
Step 4
Add your slaw to the wrap and strips of salmon
Step 5
Wrap tightly by tucking in all sides before rolling
Step 6
For the avocado salad, dice one avocado, one tomato.
Step 7
Combine with zest of one lime and season with freshly cracked black pepper
Step 8
Finish the salsa with the juice of line lime and 2 tablespoons of olive oil. Mix to combine
Step 9
Slice your burrito in half and serve with a side of avocado salsa
