180g Aoraki Pōhutukawa Hot Smoked Portion
200g Arborio rice
80g Onion, diced
2 Garlic cloves, finely chopped
40g Butter
150ml White wine
70g Parmesan cheese, grated
2 Tablespoons Olive oil
Salt to taste
For the stock (or you can purchased a pre-made vegetable stock):
2 Carrots, cut into chunks
2 Onions, quartered
1 Celery Stick, cut into chunks
700mL Water
Garnish
Pistachio nuts, coarsely crushed
Basil leaves, finely chopped
Parmesan, grated
